Galette from Brittany

Not your run of the mill pancake… for the gourmet who likes savory crepes!

You have to distinguish the “Galettes de blé noir”, or “Galettes de Sarrasin” which are savory pancakes made from buckwheat flour. They are also called “Galettes Bretonnes” because they are originally from the Brittany region, in the West of France. The galettes are made the same way than more commonly known sweet crepes (French pancakes), but the galettes from Brittany are cooked only on one side. Savory buckwheat pancakes can be filled with all kind of savory items and then folded into four. The galette dough is made of buckwheat flour, wheat flour, butter, salt, milk and eggs. The original recipe does not even call for wheat (gluten), milk or eggs but it is much more difficult to cook them…

You can eat the savory galettes with cold cut (ham, bacon, andouillette), smoked fish, cheese, mushrooms or vegetables. The best known galette is called “Complète” and is composed of ham, emmental cheese and a cracked egg cooked directly on top of the galette.
